Sweet Corn Latte Recipe for Specialty Coffee Lovers

Sweet corn in coffee might sound a little unusual, but hear us out! There's an art form behind a specialty coffee syrup, and about how certain flavors can take you right back to a memory. Whether it's a favorite dessert, a childhood snack, or something familiar you haven't thought about in years.

That's a lot of what inspired Lechita Dulce, our homemade sweet corn coffee syrup made with condensed oat milk, demerara sugar, and Mexican vanilla. The idea came together for our Director of Hospitality, Marcos Rodriguez, on his way back to Austin after visiting family, where his nieces were enjoying sweet cookies and cereal at dinner while their mom took a well-deserved break with a traditional dessert.

“I loved that little scene with my family! It got me thinking about how certain flavors can instantly take you back. I wanted to make a syrup that could bring out a little nostalgia for anyone, whether that's a childhood memory, something from your blended culture, or a sweet little tradition that's unique to your family.”

So, Why Sweet Corn?

Sweet corn has this beautiful natural sweetness and almost buttery quality that lends itself surprisingly well to desserts. Think pan de elote, tres leches, and all those homemade treats that feel comforting before you've even taken a bite!

We start with a sweet corn infusion, then combine it with sweetened condensed oat milk, demerara syrup, Mexican vanilla, a pinch of sea salt, and a touch of sweet corn extract to bring out that warm, buttery aroma.

It plays SO well with espresso. We pull our favorite blend at a 1:2 brew ratio to get a nice, balanced extraction that lets the coffee's flavor notes shine alongside the syrup. From there, it's all about the milk! Just enough aeration for that silky microfoam we love, without getting things too hot and losing those more delicate flavors.

Everything comes together into a soft, almost custardy latte that's still very much about the coffee, just with a little dessert energy. And it's just as good iced, bringing out a whole different side of the coffee and syrup!

Bringing Lechita Dulce Home

One of our favorite things about this syrup is how approachable the ingredients are! You don't need a professional coffee setup to experiment with these flavors at home.

For the syrup: Frozen sweet yellow corn, sweetened condensed oat milk, demerara sugar, Mexican vanilla, fine sea salt, water, and a little sweet corn extract.

For the crumble: Maria cookies, Corn Flakes, and demerara sugar.

Start by gently simmering the frozen corn in water until it’s awake (she takes about 5 minutes), then blend and strain it into a fragrant infusion. Separately, dissolve demerara sugar in water to make a rich simple syrup.

Combine the corn infusion and demerara syrup with condensed oat milk, Mexican vanilla, a pinch of salt, and a touch of sweet corn extract. Whisk until smooth, cool promptly, and keep refrigerated in a clean bottle. For the crumble, have some fun and crush Maria cookies and Corn Flakes together, mix in a little demerara sugar, and store separately somewhere dry.

To make your latte, add a little syrup to espresso (we used our Cocoa Tango beans for a perfect creamy espresso), top with steamed milk, and finish with our crumble on the corner. No espresso machine? Break out the moka pot or French press for some strong coffee, or grab some homemade cold brew or flash brew! The syrup plays so well with just about any brewing method, along with your favorite milk or creamer.

A Little Sweet, A Little Sentimental

One of the things we've always loved about specialty coffee is how it brings people together, connects us to origin miles away, and gives us room to try new things. There's so much fun in exploring different flavors, sharing ideas, and finding a little community over a cup of coffee.

Lechita Dulce brings a bit of all that together. As the weather starts to cool down and life gets a little busier, we wanted something that could give you a little moment of comfort, maybe even take you right back home through a flavor or memory you haven't thought about in a while.

A little sweet, a little sentimental.

The Recipe - Easy Peasy

Want to try making your own? We've scaled down our Lechita Dulce syrup for your lovely home, making it easy to make roughly one 16 oz bottle! All you'll need is a saucepan, blender, fine-mesh strainer, and a kitchen scale.

Ingredients

Sweet Corn Infusion

  • 130 g frozen sweet yellow corn
  • 190 g water (includes a little extra for evaporation)

Concentrated Demerara Syrup

  • 110 g demerara sugar
  • 88 g water

Lechita Dulce Syrup

  • 180 g sweetened condensed oat milk
  • 150 g prepared demerara syrup
  • 120 g sweet corn infusion
  • 9 g Mexican vanilla
  • 2.25 g fine sea salt
  • 0.6 g, “a pinch”, of sweet corn extract

Nostalgic Crumble

  • 18 g Corn Flakes
  • 18 g María cookies
  • 4 g demerara sugar

Let’s go!

1. Start with the sweet corn. I know you love this stuff. Combine frozen corn and water in a saucepan and bring to a gentle simmer for about 5 minutes, then blend for 30–45 seconds. Cover and let rest for 10 minutes before straining. Set aside about 120 g of the infusion!

2. Make your concentrated demerara syrup. Gently heat the sugar and water together, stirring until dissolved. No need to boil it down! We want to keep that nice, rich consistency. Measure out 150 g for the final syrup.

3. Bring everything together. Whisk the corn infusion, demerara syrup, condensed oat milk, Mexican vanilla, salt, and sweet corn extract until smooth. Cool promptly, transfer to a clean bottle, and refrigerate.

Storage: Refrigerate in a clean, sealed bottle for up to 1 week. Shake before each use!

4. Don't forget the crumble. Crush the Corn Flakes and María cookies into a coarse crumb, then mix in a pinch or two of demerara sugar. Keep it sealed in your favorite shaker (and dry) so it stays crunchy!

Tip: Toss everything in a sealed bag and either roll over it with your palm or a rolling pin, or let one of the kiddos give it a good smash for fun points! We know parenting gets busy!

Make Yourself a Coffee

For a 10-12 oz latte, add ¾ fl oz (28–29 g) of syrup to a double espresso, whisk, and incorporate with the milk of your choice! Sprinkle the crumble along one edge for a little aroma and crunch with your first sip!

Have fun, and let us know how it tastes! <3
