Veracruz Cowboy is back in the saddle once again. A bold, high-grown Mexican coffee with deep chocolate swagger and orchard sweetness.
Sourced from over 100 smallholder farmers in the misty borderlands of Veracruz and Puebla, this lot brings notes of cocoa, roasted macadamias, and a bold, round finish. Saddle up for a versatile cup that’s rich, clean, and always ready to ride.
This year’s Veracruz Cowboy rides in from the fog-draped highlands where Veracruz meets Puebla, two coffee-rich states with some of the most unique terroir in all of Mexico. The beans come from a network of more than 100 smallholder farmers, each cultivating a few hectares in the coniferous cloud forests between 1,500 and 1,800+ meters above sea level.

We source this coffee through our partners at APG and Falcon, teams who go far beyond logistics, offering organic fertilizers, improved coffee genetics, and agronomy workshops to help farmers earn better premiums for better coffee.
The lot is a blend of Mundonovo, CR95, and Criollo varieties, processed with care: cherries undergo fruit fermentation during transport, followed by a shorter 24-hour fermentation in concrete tanks at Jesus Maria. After a clean spring-water wash, the beans are dried slowly and evenly in guardiola dryers, locking in longevity and sweetness.
Expect classic crowd-pleasing notes of cocoa powder, milk chocolate, caramel apple, cherry, and roasted almond, with a crisp, round body that works across brew methods, from filter to flat white.

Yes! We ship all orders fresh from our roastery, and expedited shipping is available at checkout if you need your beans in a hurry. Standard shipping usually gets coffee to most U.S. addresses in 2–5 business days, but if you can’t wait that long, select a faster option and we’ll make sure your coffee is roasted, packed, and on its way without delay.

Not every coffee we roast carries the official organic seal, but every bean we source meets our strict quality standards. Each lot is carefully tested and selected to ensure it’s clean, fresh, and mold-free. Many of our coffees are grown using organic or sustainable practices, and some hold certifications such as USDA Organic and Rainforest Alliance. Since many of our producers are small, they may not carry certification in their country of origin or in the U.S. — but their farming methods are just as careful and responsible. For us, it’s about more than a label: it’s about roasting coffees that are traceable, ethically farmed, and taste incredible in your cup.

Yes. While most of our coffees are roasted to light-medium, we offer a darker roasted coffee too. IN general, we tend to roast coffees to their full potential, unlocking flavor notes. This means sometimes going light, and sometimes going a little darker. We will, however, never burn our coffee. It's far too good for that!
Each bag of beans will have a roast profile on the front of the bag, and on the website when you purchase.
