Sol Montaña

Climb high into flavor bliss with Sol Montaña—a bright, citrusy burst of tangerine, lime zest, maraschino cherry, and a silky swirl of caramel and macadamia. It’s sunshine in a cup.

High up in the misty mountains of San José de Lourdes, nestled on a 4-hectare plot, Eli Chilcon and his family are working coffee magic under the sun. Their farm, La Montaña, sits at a brisk 1800 meters and is planted entirely with Caturra—a variety that thrives in the cool, crisp air but is increasingly tested by the winds of climate change. Droughts? Soil challenges? Not a match for Eli’s thoughtful approach, which includes clever shade trees, strategic irrigation, and a whole lot of love.

Sol Montaña is the golden result: a washed coffee with an extended fermentation that lets all those juicy sugars and wild flavors fully bloom. Think citrus oil, tangerine, lime zest, with a playful pop of maraschino cherry and a mellow, creamy finish of macadamia and caramel. It's smooth, structured, and sparkling—like the mountain sunrise it’s named for.

From harvest to rest to a careful 48-hour fermentation and sun drying, this coffee takes its sweet time to be amazing. It’s then transported through a careful chain of hands and hearts to land here in your cup—ready to brighten your morning, your mood, and maybe even your soul.

FAQ

  • Our specialty coffee beans are roasted fresh in small batches every week in Austin TX.

We never ship old coffee — your order is packed within days of roasting so you taste peak flavor in every bag of beans.

  • We ship Tuesday, through to Friday every week.

Some bank holidays may affect shipping by 24 hours.

  • Yes! We ship all orders fresh from our roastery, and expedited shipping is available at checkout if you need your beans in a hurry. Standard shipping usually gets coffee to most U.S. addresses in 2–5 business days, but if you can’t wait that long, select a faster option and we’ll make sure your coffee is roasted, packed, and on its way without delay.

  • Not every coffee we roast carries the official organic seal, but every bean we source meets our strict quality standards. Each lot is carefully tested and selected to ensure it’s clean, fresh, and mold-free. Many of our coffees are grown using organic or sustainable practices, and some hold certifications such as USDA Organic and Rainforest Alliance. Since many of our producers are small, they may not carry certification in their country of origin or in the U.S. — but their farming methods are just as careful and responsible. For us, it’s about more than a label: it’s about roasting coffees that are traceable, ethically farmed, and taste incredible in your cup.

  • Yes. While most of our coffees are roasted to light-medium, we offer a darker roasted coffee too. IN general, we tend to roast coffees to their full potential, unlocking flavor notes. This means sometimes going light, and sometimes going a little darker. We will, however, never burn our coffee. It's far too good for that!

Each bag of beans will have a roast profile on the front of the bag, and on the website when you purchase.

  • Specialty coffee is the top tier of coffee in the world — beans that score 80+ points on the Specialty Coffee Association’s quality scale. It means the coffee is grown with care, harvested at peak ripeness, and free from defects like mold or bitterness.

Beyond the score, specialty coffee celebrates unique flavor profiles that reflect the farm, region, and roast. At Creature Coffee, we source from small-lot producers who prioritize sustainability and quality, then roast each batch to highlight sweetness, balance, and complexity. In short: it’s coffee that tastes as good as it makes you feel.
