Born in the breathtaking regions of Cauca, Caldas, and Tolima, Colombia, this decaf delight comes from Siruma, a company dedicated to empowering underserved farming communities. With a name inspired by the Wayuunaiki language (spoken by indigenous people of Northern Colombia), Siruma means “heaven and skies”—and trust us, this coffee lives up to its dreamy name.

Unlike your average decaf, Chill Bill is crafted with the EA (ethyl acetate) sugarcane process—totally natural, no harsh chemicals, no weird aftertaste.

Local sugarcane is fermented to create ethyl acetate, which gently removes caffeine while keeping the coffee smooth, clean, and flavorful. Beyond taste, Chill Bill has purpose: Siruma partners directly with smallholder farmers, ensuring fair pay and full traceability from cherry to cup. By sourcing decaf from the same communities as regular lots, more revenue flows back to farmers for a brighter future.

    We never ship old coffee — your order is packed within days of roasting so you taste peak flavor in every bag of beans.

  • Yes! We ship all orders fresh from our roastery, and expedited shipping is available at checkout if you need your beans in a hurry. Standard shipping usually gets coffee to most U.S. addresses in 2–5 business days, but if you can’t wait that long, select a faster option and we’ll make sure your coffee is roasted, packed, and on its way without delay.

  • Not every coffee we roast carries the official organic seal, but every bean we source meets our strict quality standards. Each lot is carefully tested and selected to ensure it’s clean, fresh, and mold-free. Many of our coffees are grown using organic or sustainable practices, and some hold certifications such as USDA Organic and Rainforest Alliance. Since many of our producers are small, they may not carry certification in their country of origin or in the U.S. — but their farming methods are just as careful and responsible. For us, it’s about more than a label: it’s about roasting coffees that are traceable, ethically farmed, and taste incredible in your cup.

  • Yes. While most of our coffees are roasted to light-medium, we offer a darker roasted coffee too. IN general, we tend to roast coffees to their full potential, unlocking flavor notes. This means sometimes going light, and sometimes going a little darker. We will, however, never burn our coffee. It's far too good for that!

    Each bag of beans will have a roast profile on the front of the bag, and on the website when you purchase.
