This superb heirloom varietal hails from the Chelbessa region of Yirgacheffe, a crown jewel in the Ethiopian coffee-growing regions. Well, this here Heirloom Bloom is a prime example of the detail that goes into each and every invigorating morsel.
Heirloom Bloom is completely hand-harvested from the hills in the Chelbessa region of Ethiopia. Only the ripest cherries are sent in to be processed, ensuring taste is at a peak. After sorting, the coffee cherries are pulped and fermented for anywhere from 24 to 36 hours dependent on weather conditions. Following that, the remaining parchment is thoroughly washed in clean water and sent into grading channels where the cherries are separated based on density. After grading, the coffee is soaked again in clean spring water tanks for 12-24 hours to be sure all traces of the fermented mucilage has been removed.
And that isn't it. Once it is acceptably soaked, the coffee is laid out to dry on raised beds for 10 to 14 days. During this period it is regularly turned and the coffee is sorted completely by hand so that any damaged or discolored beans can be removed from the supply, leaving only the cream of the crop to eventually be shipped out and roasted. The process workers tend to the coffee like a celebrated grandparent. They cover it with plastic during the hottest hours of the day to protect it from drying too quickly and then again overnight to prevent condensation from seeping into the drying parchment.
It's a true labor of love, and it shows in every cup.
