Brew Essentials

Coffee: 23g fresh-roasted beans (5-6 tbsp)
Grind: medium/fine
Water: 360g (12 oz) @ 205F
Brew time: 3m
Serves: 12oz of coffee (1 cup)

Kalita Wave (155 single cup, 185 double cup)
Filter
Kettle
Burr grinder
Digital kitchen scale (recommended)
Timer
Thermometer (preferred)

  • Fresh-roasted coffee is best. Your coffee is at peak freshness up to 14 days after the beans have been roasted. Check your bag to see the roast date.
  • For best results, grind your coffee just before you brew. Burr grinders are best.
  • Use a digital scale. This takes the guesswork out of brewing and gives you a consistently perfect cup.
  • If your water is fresh and tastes good, so will your coffee. Use filtered water.
  • Make sure your water is the right temperature, as coffee extracts best between 195 – 205F. If you don’t have a thermometer, leave your water for 30 seconds after the boil.

Water prep

1. Heat your fresh, filtered water to 200F (just off boil)
2. Place your filter in your Kalita Wave and rinse with hot water to eliminate any paper residue. Let the water drain into your mug. Discard your rinse water.

Coffee prep

1. Grind 23g of coffee to a medium to fine size.
2. Pour your coffee grounds into your filter. Level your coffee grounds with a gentle shake.

Ready?

Place your Kalita Wave and mug onto your digital scales.
Tare to 0.

The Pour Over

Use continual circular motions, starting in the centre, working your way to the edge of the coffee and then back in. Try not to pour water onto the filter itself.

Tare your digital scale to 0.
Start your timer.

0 – 15s: Pour 50g of water evenly over your coffee grounds.

15s – 45s: Watch the bloom in all its beauty, growing and expanding while forming a crust on top of the grounds.

45s – 3m: Pour another 310g of water in a circular motion. This can be done in 2- 4 increments. When your timer reaches 2 minutes, you should have poured a total of 360g of water.

Serve and Enjoy

Once most of the water has drained through into your mug, remove your Kalita Wave. Swirl your coffee and serve.
Take your filter and grounds out of the Kalita Wave and compost if possible. Clean with hot water.

Tastes too strong so bitter? Water didn’t drain out in time? Grind your coffee a little coarser.
Water drained out too quick? Tastes too weak or sour? Grind your coffee a little finer.
Each coffee has it’s own unique characteristics and sweet spot. Experiment further by tweaking the coffee:water ratio.
