For us, it's all about the people. And this coffee comes from really, really good people.

Built originally back in the 1800's as a flour mill, the wonderful folks who run the Pastores Mill have always been a part of the economic circle of life in the colonial town of Antigua. In those early years, they would purchase wheat from local farmers, process it, and sell it to the local townsfolk as flour for their daily baking needs. In the early 20th century they transitioned from wheat to coffee, but kept the same mindset - buy local, process, sell local. Now, all those years later, they've upped the game a notch as they have opened their arms to bring in coffee friends from the around the globe for the opportunity to delight in their art.

We're fortunate to have gotten our hands on some of their recent lots which were produced by multiple smallholder farmers in the region. Prepared traditionally, the coffee is fully washed and then dried beneath the Guatemalan sun until hitting just the perfect levels to showcase a full body of chocolate and caramel. The team at Pastores literally hand sort through the coffee beans to be sure nothing but quality passes through their system and we're incredibly happy to have the chance to work with them because of this attention to detail and craft.
