At the heart of Murang’a, Kenya lies the Kahete Factory. Established in 1984, it's the cornerstone of the Rwaikamba Farmers Cooperative. This isn't just any coffee spot; Kahete is a hub of dreams for over 600 passionate coffee producers from the communities of Karunge, Gataragwa, and Kirimiya. Twice a year, these communities buzz with excitement, as coffee is harvested and then weighed at the factory, rewarding the hardworking farmers immediately. 🌱
But the magic truly starts post-harvest. Coffee cherries embark on a meticulous 72-hour journey: disk depulping strips most of the fruit, followed by a 24-hour fermentation, and another wash. The drying process is a dance with nature, as it hinges on the whims of the climate. It can be a slow sun-kissed tango lasting up to 15 days or a quicker waltz of just a week. 🌤️
